SLOVENIA : ŠTAJERSKA : HALOZE HILLS
SUSTAINABLE : Pinot Grigio
MED-BODIED, PEAR, RED APPLE, FLORAL, MELON, NEUTRAL OAK
< style="margin: 0;">This is not the Pinot Grigio you know from Alto Adige. Bojan Kobal gives the wine 36 hours on its skins — long enough to pull a salmon-pink color and a layer of texture, not so long it becomes an orange wine. The result sits in the narrow register between a fresh white and skin-contact territory: more presence and grip than the former, less tannin than the latter.
Six months on lees in stainless adds a discreet creaminess to the finish. Five percent of the wine sees a month in used 225L oak for structure rather than flavor. Marl soils in the Haloze Hills, 250 to 400 meters up — the wine has a backbone that straightforward Pinot Grigio almost never does.
< style="margin: 0;">PAIRINGS :
| Grilled calamari or shrimp | minerality and slight tannic salinity are a natural match for grilled shellfish |
| Cured salmon or smoked trout | briny, fatty fish work with the wine's slight grip; color mirrors the plate |
| Soft goat cheese or fresh ricotta | light tangy dairy finds the lees-derived creaminess and fresh acidity |
