USA : CALIFORNIA : SAN LUIS OBISPO COAST
SUSTAINABLE : Sauvignon Blanc
MEDIUM-BODIED, CITRUS ZEST, HONEYDEW MELON, LEMON CURD, TARRAGON, NEUTRAL OAK
< style="margin: 0;">Stephen Dooley has made Flying Cloud out of Stephen Ross Wine Cellars in San Luis Obispo since 2003, using the same infrastructure as his flagship estate wines but building for everyday price points. For the Sauvignon Blanc he pulls from Cavalli Farm and Trestle Vineyard along the San Luis Obispo Coast, picking by hand in mid-September. Cool coastal air and consistent marine influence are the whole pitch here; the vineyard does the work.
The 2024 ferments cold on native yeast, mostly in stainless steel with a small barrel component for texture. The profile sits closer to the Loire than New Zealand: crisp and mineral-edged, the citrus and melon in front, a light herbal lift behind it. 366 cases made.
< style="margin: 0;">PAIRINGS :
| Grilled halibut with herb butter | the acidity cuts the fat and picks up the herbal lift in the wine |
| Fresh goat cheese crostini | a classic match: citrus and mineral pull the cheese into focus |
| Steamed mussels in white wine | brine on brine; the lemon and melon finish makes the broth sing |
